It's simple:
Can you walk in a straight line? Yes.
Can you walk in a straight line on a tightrope? Probably not.
You're still doing the same motions, but the tightrope means you have to focus 100% on those motions, because a single misstep means you're out.
It's the same on street circuits. Regular circuits usually have run-off everywhere; in a street circuits, a split-second of doubt will end with you fighting with a wall, and the wall will always win.

I understand there is a significant difference between the two from the metaphor, but it still doesn't explain what that difference is.
Is a regular circuit one where the course is built with chicanes and possible grass, gravel, or asphalt between the features and the wall, wheres a street course replaces the chicanes with, say, guardrail? So it's just a tighter course?

This is a "regular" modern circuit:

On the former, to drive at the limit, you get close to grass. On the latter, you get close to walls.

No, no it's fine. At first I was a bit annoyed, but then I realized that I wasn't the one responsible for the Drive video, nor was I the one who made the quote. I just pointed out what I liked. What I said there was supposed to be a bit of an ironic jab at my own post.
